Spanikopita

Ingredients:

1 onion
2 cloves garlic
~400g spinach (or one large bag fresh spinach)
1 block of feta cheese
1/8 cup olive oil
½ tablespoon salt
Phyllo pastry

Instructions:

  1. heat olive oil on medium heat
  2. add chopped onion and garlic
  3. heat until brown
  4. add finely chopped spinach and salt
  5. once moisture leaves spinach and becomes less crisp, drain excess water
  6. add chopped feta cheese
  7. stir until cheese melts
  8. let mixture sit
  9. prepare phyllo pastry by opening package and laying phyllo out; make sure you have a moist cloth at all times (e.g. unused J-cloth).
  10. fold one sheet twice to make long rectangle (cover the remaining with moistened J-cloth)
  11. apply a bit of olive oil
  12. add mixture to one end of long rectangle shaped sheet
  13. fold end as if making a triangle
  14. continue to fold in triangular fashion until reach other end
  15. apply some olive oil
  16. place on baking sheet (covered with small amount of oil)
  17. bake in oven @350°F until phyllo brown
